Apple Crumble
Soft, sharp apples with cinnamon under a golden, crunchy oat topping. Made with plant butter, so it's vegan.
Ingredients
Quantities for 6. Tick things off as you go.
Method
Heat the oven
Heat the oven to 190C / 375F. Toss the apples with the caster sugar, cinnamon and lemon juice, then spread them in a baking dish about 20 by 25 cm.
Rub in the butter
Rub the flour, salt and vegan butter together with your fingertips until the mixture looks like coarse breadcrumbs, with a few larger lumps.
Mix the topping
Stir in the demerara sugar and oats. Squeeze a few handfuls together, then let them fall back into the bowl to make clusters.
Top the apples
Scatter the crumble evenly over the apples without pressing it down.
Bake
Bake for 40 to 45 minutes, until the topping is deep golden and the apple juices are bubbling up thickly at the edges.
Rest
Leave it to stand for 10 minutes before serving.

Tips
- Keep the vegan butter cold so it forms little lumps in the flour.
- Leave a few larger crumbs and clusters for extra crunch.
- Use a baking dish about 20 by 25 cm so the apples and topping bake evenly.
Swaps
- Use ground mixed spice instead of cinnamon for a warmer flavour.
- Replace the rolled oats with more plain flour for a finer crumble topping.
Storing
Cover and refrigerate leftovers for up to 3 days, then reheat in the oven until warmed through.
