Buffalo Wings
Crisp chicken wings tossed in a buttery, tangy hot sauce, with cool celery on the side.
Ingredients
Quantities for 4. Tick things off as you go.
Method
Heat the oven
Heat the oven to 220°C (200°C fan). Line a baking tray with foil and set a wire rack on top.
Dry and season
Pat the wings very dry with kitchen paper. Toss with the baking powder and salt.
Roast the wings
Roast the wings on the rack at 220°C (200°C fan) for 45 to 50 minutes, turning halfway, until deep golden and crisp and the thickest part reaches 74°C (165°F).
Make the sauce
While the wings roast, melt the butter in a small pan over low heat for 2 minutes. Stir in the hot pepper sauce, vinegar and garlic powder for 1 minute, until smooth and just warmed through.
Toss and serve
Put the cooked wings in a large bowl and pour over the sauce. Toss until coated, about 1 minute, and serve straight away with celery sticks and blue cheese dressing.

Tips
- Dry the wings thoroughly before seasoning for the crispest skin.
- Use baking powder, not bicarbonate of soda, which can leave a bitter taste.
- Avoid boiling the sauce so the butter does not separate.
Swaps
- Use another hot pepper sauce to suit your preferred heat level.
- Serve with carrot sticks instead of celery.
Storing
Refrigerate leftover wings in a covered container for up to 3 days and reheat in a hot oven until heated through.
