Aloo Gobi
Potato and cauliflower in a dry, turmeric-yellow spice mix with ginger and cumin. Vegan and everyday.
Ingredients
Quantities for 4. Tick things off as you go.
Method
Temper the cumin
Heat the oil in a wide lidded pan over medium heat for 1 minute until shimmering. Add the cumin seeds and cook for 30 seconds until fragrant and just beginning to darken.
Soften the aromatics
Add the onion and cook over medium heat for 6 to 8 minutes, stirring often, until soft and lightly golden. Add the ginger, garlic and optional chilli; cook for 1 minute until fragrant.
Toast the spices and coat the potatoes
Stir in the turmeric and ground coriander over medium heat for 20 seconds until fragrant. Add the potatoes and salt, then stir for 2 minutes until evenly coated.
Steam the potatoes
Add 120 ml water, cover the pan fully, and cook over low heat for 10 minutes, stirring once halfway through; the potatoes should be starting to soften and the pan should retain a little liquid.
Cook the cauliflower
Fold in the cauliflower and tomato, cover the pan fully, and cook over low heat for 15 to 20 minutes, stirring gently every 5 minutes, until potatoes are easily pierced and cauliflower is tender but holds its shape.
Dry and finish
Uncover and cook over medium heat for 4 to 8 minutes, stirring gently, until no liquid pools. Stir in the garam masala and coriander, taste, and add up to ½ tsp more fine salt if needed.

Tips
- Keep the lid on between stirring during both covered cooking stages. If the pan becomes dry or catches before the vegetables are tender, add 1 tablespoon water and cover again.
- Stir gently to help the cauliflower florets and potato cubes hold their shape.
- The salt quantity is for fine sea salt or fine table salt; coarse crystals may need a different amount.
Swaps
- Replace up to 150 g cauliflower with peas, adding them for the final 5 minutes of covered cooking.
- For more heat, leave the chilli seeds in or add another small chopped green chilli with the ginger and garlic.
Storing
Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a covered pan over low heat, stirring gently, until steaming hot throughout; add a splash of water only if needed.
