Mango Lassi
Ripe mango blended with cold yogurt, a little milk and a pinch of cardamom into a thick, cooling drink.
Ingredients
Quantities for 2. Tick things off as you go.
Method
Chill the glasses
If desired, chill two glasses in the freezer for 10 minutes, until cold to the touch.
Prepare the mango
Peel the mangoes, cut the flesh away from the stones and roughly chop it; the flesh should be ripe and yielding.
Blend
Put the mango, yogurt, milk, honey and ⅛ teaspoon cardamom in a blender; blend for 20 to 30 seconds, until smooth and frothy.
Adjust
Taste the lassi and add more honey or cardamom to taste, or a splash of milk for a thinner drink; blend for 5 seconds, until combined.
Serve
Pour into the chilled glasses and serve immediately, while cold and frothy.

Tips
- Use fragrant, ripe mangoes for a sweeter, smoother drink.
- Start with ⅛ teaspoon cardamom, then add more to taste.
- Blend only until smooth and frothy to help keep the lassi cold.
Swaps
- Replace the honey with 1 tablespoon sugar or maple syrup, adjusting to taste.
- Use ground cinnamon instead of cardamom for a different flavour.
Storing
Best served immediately. Refrigerate leftovers in a covered container for up to 1 day and stir or briefly blend before serving.
