Eton Mess
A classic British pudding of crushed meringue, softly whipped cream and juicy strawberries.
Ingredients
Quantities for 4. Tick things off as you go.
Method
Prepare the strawberries
Hull and quarter the strawberries, keeping the pieces a similar size.
Set aside the toppings
Reserve about 100 g of strawberries for the topping.
Sweeten the berries
Toss the remaining strawberries with the caster sugar and lemon juice until glossy and juicy.
Whip the cream
Whisk the double cream with the vanilla until it holds soft peaks, stopping before it looks grainy.
Break the meringue
Break the meringue nests into bite-sized pieces, then set aside about a quarter for the topping.
Make the strawberry sauce
Mash about a quarter of the sugared strawberries with a fork until saucy, then stir them back into the remaining berries.
Fold the pudding together
Gently fold most of the strawberries and meringue through the cream until just streaked.
Serve
Spoon into four bowls or glasses and top with the reserved strawberries and meringue; serve straight away while the meringue is crisp.

Tips
- Use a large bowl so the mixture is easy to fold without spilling.
- Chill the cream before whisking for a quicker, steadier whip.
Swaps
- Replace some or all of the strawberries with raspberries.
- Use finely grated orange zest instead of the lemon juice.
Storing
Cover and refrigerate leftovers for up to 1 day; the meringue will soften.
