Method

  1. Separate the fat

While the turkey rests, pour the tin juices into a jug and leave for 5 minutes so the fat rises. Leave the browned bits stuck to the tin.

  2. Measure the fat

Spoon 4 tbsp of the fat back into the tin. Skim off and discard the rest of the fat, keeping the dark juices underneath.

  3. Make the roux

Set the tin over medium heat, across two rings if needed. Whisk in the flour and cook for 2 to 3 minutes, scraping, until it smells toasty and turns light brown.

  4. Deglaze

Pour in the wine and let it bubble for 1 minute, scraping up every brown bit from the bottom of the tin.

  5. Add the stock

Whisk in the hot stock and the saved juices a ladle at a time, until smooth.

  6. Simmer

Add the thyme and simmer for 8 to 10 minutes, whisking now and then, until it coats the back of a spoon.

  7. Season

Taste, then add the salt and pepper a little at a time. Tin juices can already be salty, so always season at the end.

  8. Strain and serve

Pour through a sieve into a warm jug and stir in any juices from the resting turkey. Serve hot.

  9. No drippings

Melt the butter in a saucepan over medium heat and fry the onion for 10 minutes, until deep golden. Then follow steps 3 to 8, using the butter in place of fat.

Tips

  • Too thick? Whisk in a splash of hot stock. Too thin? Simmer it a few minutes longer.
  • Simmer the turkey neck in the stock while the bird roasts for a deeper flavour.
  • You can make the no-drippings version a day ahead, then whisk in the tin juices on the day.

Swaps

  • Dry cider works in place of the white wine.
  • Use sage or rosemary instead of thyme.

Storing

Refrigerate in a covered container for up to 3 days, and reheat until bubbling, whisking in a splash of stock if it has thickened.
